To add on to what others have said the original hunter x hunter has quite a bit of filler inside and the direction is quite a bit grimmer than the 2011 version its different from the manga but very interesting in its own way. The hunter exam is the first arc of the show and as such it is vital in the introduction of the core themes and key characters for the rest of the show. There are multiple scenes where it shouldve been more dark or violent but the anime dialed it back a bit.

The 2011 series was remade from the ground up. Greed island arc is computer animated while the 2011 version is computer animated. All the animation voice acting and such was redone.

The largest difference is animation quality due to when both were released. The most obvious difference between the two versions is that the 1999 version is mostly traditionally animated hunter exam arc to yorknew city arc are traditionally animated. It follows the same basic plotline as the original but with really different pacing.

Later arcs show it particularly well but hunter x hunter is a dark and bloody story a lot of the time and the 2011 anime kind of takes some of the wind out of that.
